Description

Ingredients

  • 1 Large yellow onion
  • 4 tablespoons Butter
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon Old Bay seasoning
  • 1 teaspoon Garlic powder
  • 1 teaspoon Dried parsley
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon Black pepper

Instructions

  1. Preheat oven to 400°F (205°C) and trim the onion root end slightly so it can stand upright.
  2. Peel the outer skin, then cut a deep cross into the top without slicing all the way through.
  3. Place the onion on foil; gently open layers and insert butter into the center.
  4. Sprinkle Cajun seasoning, Old Bay, garlic powder, salt, pepper, and parsley over and between layers.
  5. Wrap tightly in foil and place in a small baking dish.
  6. Roast until deeply golden, ultra-tender, and swimming in buttery juices.
  7. Unwrap carefully and spoon the seasoned butter over the onion before serving.
