- 1 Large yellow onion
- 4 tablespoons Butter
- 2 tablespoons Cajun seasoning
- 1 tablespoon Old Bay seasoning
- 1 teaspoon Garlic powder
- 1 teaspoon Dried parsley
- 1 teaspoon Kosher salt
- 1/2 teaspoon Black pepper
Instructions
- Preheat oven to 400°F (205°C) and trim the onion root end slightly so it can stand upright.
- Peel the outer skin, then cut a deep cross into the top without slicing all the way through.
- Place the onion on foil; gently open layers and insert butter into the center.
- Sprinkle Cajun seasoning, Old Bay, garlic powder, salt, pepper, and parsley over and between layers.
- Wrap tightly in foil and place in a small baking dish.
- Roast until deeply golden, ultra-tender, and swimming in buttery juices.
- Unwrap carefully and spoon the seasoned butter over the onion before serving.
