- 1 lb Chicken breast (or rotisserie chicken)
- 1 cup Elbow macaroni
- 2 cups Sharp cheddar cheese, shredded
- 1 cup Heavy cream
- 2 tbsp Butter
- 1 Onion, diced
- 2 cloves Garlic, minced
- 4 cups Chicken broth
- 1 cup Milk
- 2 tbsp Flour
- 1 tsp Paprika
- 1 tsp Dried thyme
- Salt and black pepper to taste
- Optional: bacon bits or croutons for topping
Instructions
- Melt butter in a large pot over medium heat; sauté onion until soft, then add garlic.
- Stir in flour and cook briefly to form a light roux.
- Slowly whisk in chicken broth and milk until smooth.
- Add diced chicken and macaroni; simmer until pasta is tender.
- Lower heat and stir in heavy cream.
- Add shredded cheddar cheese, stirring until melted and creamy.
- Season with paprika, thyme, salt, and pepper; serve hot with toppings if desired.
Notes
- For a richer flavor, use rotisserie chicken.
- Adjust the thickness of the soup by adding more or less broth.
- Top with bacon bits or croutons for added texture.
