- 6 cups Beef broth

- 1 cup Dry red wine
- 4 Baguette slices
- Salt and black pepper to taste
Instructions
- Season short ribs with salt and pepper; sear in olive oil until deeply browned. Remove and set aside.
- In the same pot, add sliced onions and cook slowly until deeply caramelized.
- Stir in garlic and thyme; cook until fragrant.
- Deglaze with red wine, scraping up browned bits.
- Add beef broth and return short ribs to the pot.
- Simmer gently until ribs are fork-tender; remove, shred meat, and discard bones.
- Return meat to soup, top with toasted baguette slices and Gruyère, and broil until bubbly.
