Creamy Cajun Sausage & Potato Comfort Soup delights with flavor! Bold Cajun spice, tender potatoes, and smoky sausage in a rich, creamy broth.

- 1 lb smoked andouille sausage, sliced
- 3 cups diced Yukon gold potatoes
- 1 small onion, diced
- 2 cups heavy cream
- 1 red bell pepper, diced
- 2 cloves garlic, minced
- 3 cups chicken broth
- 1 ½ tsp Cajun seasoning
- ½ tsp smoked paprika
- 1 tbsp butter
- Salt and black pepper to taste
- Fresh parsley, chopped
Instructions
- In a large pot over medium heat, sauté sausage slices until browned; remove and set aside.
- In the same pot, melt butter and cook onion, bell pepper, and garlic until softened.
- Add diced potatoes, chicken broth, Cajun seasoning, and smoked paprika. Simmer 15–20 minutes until potatoes are tender.
- Stir in heavy cream and return sausage to the pot.
- Simmer another 5–7 minutes until slightly thickened.
- Taste and adjust seasoning with salt and pepper.
- Garnish with chopped parsley and serve hot with toasted bread.
Notes
- For a spicier soup, add more Cajun seasoning.
- Can substitute andouille sausage with any smoked sausage of your choice.
- Serve with crusty bread for a complete meal.
