- 8 oz Lasagna noodles, broken into pieces
- 8 oz Cream cheese
- 4 cups Chicken broth

- 1 Onion, diced

- 1 Carrot, diced
- 2 stalks Celery, diced
- 2 cups Spinach, fresh
- 1 tsp Basil, dried
- 1 tsp Oregano, dried
- Salt, to taste
- Black pepper, to taste
- 1 cup Heavy cream
- 1 cup Ricotta cheese
- 1 cup Mozzarella cheese, shredded
- 1/2 cup Parmesan cheese, grated
Instructions
- Heat olive oil in a large pot; sauté onion, carrot, and celery until softened.
- Add garlic, basil, and oregano; cook until fragrant.
- Pour in chicken broth and bring to a gentle boil.
- Break lasagna noodles into pieces and simmer until tender.
- Stir in shredded chicken, cream cheese, and heavy cream until smooth.
- Add ricotta, mozzarella, parmesan, and spinach; stir until melted and wilted.
- Season with salt and pepper; simmer briefly and serve hot.
Notes
- For a lighter version, you can use low-fat cream cheese and heavy cream.
- Feel free to add other vegetables like zucchini or bell peppers for extra nutrition.
