- 2 tbsp chopped parsley
- ¼ cup flour
- 1 egg

Instructions
- In a bowl, mix mashed potatoes, flour, egg, salt, and pepper until smooth.
- Stir in mozzarella, cheddar, and parsley until evenly combined.
- Shape mixture into round patties about ½ inch thick.
- Heat butter or oil in a skillet over medium heat.
- Cook patties 3–4 minutes per side until golden brown and crisp.
- Let cool slightly to allow cheese to set, then sprinkle with extra parsley.
- Serve warm with sour cream or garlic dip.
