- 4 Boneless skinless chicken breasts
- 1/2 cup Honey
- 1/4 cup Dijon mustard
- 1/2 cup Chicken broth
- 2 tbsp Whole grain mustard
- 2 cloves Garlic (minced)
- 1 tsp Dried thyme
- 1 tsp Paprika
- Salt & black pepper to taste
- 1 tbsp Cornstarch (optional, for thickening)
- Fresh parsley (for garnish)
Instructions
- Season chicken lightly with salt and pepper; place in the slow cooker.
- Whisk honey, Dijon mustard, whole grain mustard, garlic, broth, thyme, and paprika together.
- Pour sauce over chicken, turning to coat evenly.
- Cover and cook on LOW for 6 hours or HIGH for 3–4 hours until very tender.
- Shred chicken directly in the slow cooker and stir into the sauce.
- Optional: thicken by stirring in a cornstarch slurry and cooking for 10 more minutes.
- Garnish with parsley and serve over rice, mashed potatoes, or vegetables.
