- 2 Carrots

- Asparagus (optional side)
- Fresh parsley or chives for garnish
Instructions
- Toss sweet potatoes and carrots with olive oil, salt, pepper, and herbs; roast until golden and tender.
- Season tilapia lightly with salt and pepper.
- Melt butter in a skillet; add garlic and cook until fragrant.
- Pan-sear tilapia until golden and flaky, basting with garlic butter.
- Finish fish with fresh lemon juice.
- Steam asparagus until bright green and tender-crisp (optional).
- Plate tilapia with roasted veggies and garnish with fresh herbs.
