Ingredients

  • 1 lb Pork shoulder or pork chops (finely chopped)
  • 2 tbsp Fresh ginger (grated)
  • 3 tbsp Fresh lime juice
  • 1 cup Jasmine rice
  • 1 can Coconut milk
  • 2 cloves Garlic (minced)
  • 3 tbsp Soy sauce
  • 2 tbsp Brown sugar or honey
  • 1 tbsp Fish sauce (optional)
  • 2 tbsp Neutral oil
  • 1/4 cup Chopped cilantro
  • 1/4 cup Roasted peanuts (chopped)
  • 2 Green onions (sliced)
  • Salt to taste

Instructions

  1. Cook jasmine rice with coconut milk, water, and salt; keep warm.
  2. Heat oil in a skillet over medium-high heat and brown the pork until caramelized.
  3. Add garlic and ginger; sauté until fragrant.
  4. Stir in soy sauce, brown sugar, and a splash of lime juice; let glaze thicken.
  5. Finish with remaining lime juice and adjust seasoning with salt or fish sauce.
  6. Spoon pork over coconut rice and garnish with cilantro, peanuts, and green onions.

Notes

  • For a spicier kick, add red pepper flakes to the pork mixture.
