- 2 tbsp Fresh ginger (grated)
- 3 tbsp Fresh lime juice
- 1 cup Jasmine rice
- 1 can Coconut milk
- 2 cloves Garlic (minced)
- 3 tbsp Soy sauce
- 2 tbsp Brown sugar or honey
- 1 tbsp Fish sauce (optional)
- 2 tbsp Neutral oil
- 1/4 cup Chopped cilantro
- 1/4 cup Roasted peanuts (chopped)
- 2 Green onions (sliced)
- Salt to taste
Instructions
- Cook jasmine rice with coconut milk, water, and salt; keep warm.
- Heat oil in a skillet over medium-high heat and brown the pork until caramelized.
- Add garlic and ginger; sauté until fragrant.
- Stir in soy sauce, brown sugar, and a splash of lime juice; let glaze thicken.
- Finish with remaining lime juice and adjust seasoning with salt or fish sauce.
- Spoon pork over coconut rice and garnish with cilantro, peanuts, and green onions.
Notes
- For a spicier kick, add red pepper flakes to the pork mixture.
- Ensure the pork is cooked through before serving.
- Can substitute jasmine rice with basmati rice if preferred.
