Ingredients
- Cooked chicken, shredded
- Leeks, sliced
- Puff pastry
- Heavy cream
- Butter
- Onion, finely chopped
- Garlic
- Chicken stock
- Flour
- Dijon mustard
- Fresh thyme
- Salt & pepper
- Egg (for egg wash)
- Chopped chives or parsley
Instructions
- Sauté butter, onion, and leeks until soft and sweet; add garlic briefly.
- Stir in flour and cook 1 minute, then slowly whisk in chicken stock and cream.
- Add mustard, thyme, salt, and pepper; simmer until thick.
- Fold in shredded chicken and herbs; cool slightly.
- Spoon filling into a pie dish and cover with puff pastry, sealing edges.
- Brush with egg wash and score the top.
- Bake until deeply golden and bubbling; rest 10 minutes before serving.
Notes
- For a richer flavor, use homemade chicken stock.
