Description

Juicy chicken breasts rolled around creamy herb ricotta and roasted to golden perfection.


Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup whole milk ricotta cheese
  • ½ cup shredded mozzarella
  • 2 tablespoons fresh chopped spinach & parsley
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • ½ teaspoon paprika
  • Salt & black pepper to taste
  • 2 tablespoons olive oil
  • Fresh rosemary for garnish

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a baking dish.
  2. Butterfly each chicken breast and pound gently to even thickness.
  3. In a bowl, mix ricotta, mozzarella, spinach, parsley, garlic, salt, pepper, and Italian seasoning.
  4. Spread filling evenly over each chicken breast, then roll tightly and secure with toothpicks.
  5. Rub rolls with olive oil and season with paprika, salt, and pepper.
  6. Sear in a hot skillet for 2–3 minutes per side until golden, then transfer to oven and bake 20–25 minutes until cooked through.
  7. Rest 5 minutes before slicing. Garnish with rosemary and serve warm.
