- 4 boneless, skinless chicken breasts
- 1 cup whole milk ricotta cheese
- ½ cup shredded mozzarella
- 2 tablespoons fresh chopped spinach & parsley
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- ½ teaspoon paprika
- Salt & black pepper to taste
- 2 tablespoons olive oil
- Fresh rosemary for garnish
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a baking dish.
- Butterfly each chicken breast and pound gently to even thickness.
- In a bowl, mix ricotta, mozzarella, spinach, parsley, garlic, salt, pepper, and Italian seasoning.
- Spread filling evenly over each chicken breast, then roll tightly and secure with toothpicks.
- Rub rolls with olive oil and season with paprika, salt, and pepper.
- Sear in a hot skillet for 2–3 minutes per side until golden, then transfer to oven and bake 20–25 minutes until cooked through.
- Rest 5 minutes before slicing. Garnish with rosemary and serve warm.
Notes
- Ensure chicken is pounded to an even thickness for even cooking.
- Feel free to customize the herbs based on your preference.
