Instructions
- Blend cottage cheese until completely smooth and creamy.
- Add egg, cocoa powder, monk fruit sweetener, and vanilla; blend until glossy.
- Fold in chocolate chips, reserving a few for topping.
- Divide batter evenly into microwave-safe ramekins.
- Sprinkle remaining chocolate chips on top.
- Microwave on high for 60–90 seconds until set but still fudgy.
- Rest for 1 minute before serving for best texture.
