Description

Spiced, juicy chicken thighs nestled into golden, flavorful rice—bold, smoky, and made perfectly in one pot.


Ingredients

  • Chicken thighs
  • Basmati rice
  • Chicken stock
  • Paprika
  • Turmeric
  • Olive oil
  • Onion
  • Garlic cloves
  • Garlic powder
  • Ground coriander
  • Dried oregano
  • Cayenne pepper
  • Chili flakes
  • Brown sugar
  • Lemon juice
  • Frozen peas
  • Green onions
  • Cooking salt
  • Perinaise or pink sauce (for serving)

Instructions

  1. Season chicken thighs with paprika, turmeric, cayenne, coriander, salt, and garlic powder.
  2. Heat olive oil in a wide pot and brown chicken on both sides; remove and set aside.
  3. Sauté onion and garlic in the same pot until soft and fragrant.
  4. Stir in rice, turmeric, paprika, oregano, chili flakes, and brown sugar; toast briefly.
  5. Pour in chicken stock and lemon juice, then nestle chicken back into the rice.
  6. Cover and simmer until rice is tender and chicken is fully cooked.
  7. Stir in peas, garnish with green onions, and serve with Perinaise if desired.

  • For a richer flavor, marinate the chicken thighs for a few hours before cooking.
