Ingredients

  • 1 ½ cups crushed cookies (speculoos or graham)
  • 1 cup heavy cream
  • ½ cup cookie butter spread
  • 8 oz cream cheese, softened
  • ¼ cup powdered sugar
  • 1 tsp vanilla extract
  • Extra cookies for garnish
  • Whipped cream for topping

Instructions

  1. Beat cream cheese, cookie butter, powdered sugar, and vanilla until smooth.
  2. In a separate bowl, whip heavy cream until stiff peaks form.
  3. Gently fold whipped cream into cookie butter mixture to make mousse.
  4. Layer crushed cookies at the bottom of cups, followed by mousse.
  5. Repeat layers until cups are filled.
  6. Top with whipped cream, cookie crumbs, and whole cookies.
  7. Chill at least 1 hour before serving for best texture.
