Ingredients
- Chicken thighs (boneless or bone-in)
- Cilantro (fresh)
- Jalapeños or aji amarillo paste
- Long-grain white rice
- Garlic
- Lime juice
- Greek yogurt or mayonnaise
- Olive oil
- Cumin
- Smoked paprika
- Salt & black pepper
- Chicken broth
- Red onion (optional)
Instructions
- Season chicken with cumin, paprika, salt, and pepper.
- Sear chicken in olive oil until deeply golden and cooked through; rest.
- Cook rice in chicken broth until fluffy; keep warm.
- Blend cilantro, jalapeños, garlic, lime juice, yogurt (or mayo), and olive oil until smooth.
- Taste green sauce and adjust salt and acidity.
- Slice chicken and serve over rice.
- Spoon generous green sauce over top and finish with fresh herbs.
Notes
- For a spicier sauce, add more jalapeños or aji amarillo paste.
- Red onion can be added for extra flavor if desired.
- Leftover green sauce can be stored in the refrigerator for up to a week.
