Instructions
- Brush filo sheets generously with melted butter and layer into a springform pan, letting edges overhang.
- Bake filo crust briefly until lightly golden; cool slightly.
- Beat cream cheese and sugar until smooth, then mix in eggs, sour cream, vanilla, lemon zest, and salt.
- Fold chopped pistachios and cinnamon into the batter.
- Pour filling into crust and bake at 325°F until just set in the center.
- Warm honey and drizzle over the cheesecake; sprinkle with more pistachios.
- Chill completely before slicing for clean layers.
