Instructions
- Preheat oven to 350°F (175°C) and line a jelly roll pan with parchment paper.
- Beat eggs and granulated sugar until light and fluffy; mix in vegetable oil, vanilla extract, and purple food coloring.
- Gently fold in sifted all-purpose flour, baking powder, and salt. Spread the batter evenly in the prepared pan.
- Bake for 10–12 minutes, then immediately roll the hot cake in parchment to prevent cracks; let cool.
- Make the filling by beating cream cheese, softened butter, powdered sugar, and vanilla extract until fluffy.
- Carefully unroll the cooled cake, spread the filling evenly, then re-roll tightly.
- Frost with the remaining cream cheese mixture, shower with rainbow sprinkles, and chill before slicing.
Notes
- Ensure eggs are at room temperature for better volume.
- Use gel food coloring for a more vibrant purple color.
- Chill the cake roll for at least 30 minutes before slicing for cleaner cuts.
