Description

Ingredients

  • 1 tsp Vanilla extract
  • 12 tbsp Purple food coloring
  • 1/2 cup Butter (softened)

Instructions

  1. Preheat oven to 350°F (175°C) and line a jelly roll pan with parchment paper.
  2. Beat eggs and granulated sugar until light and fluffy; mix in vegetable oil, vanilla extract, and purple food coloring.
  3. Gently fold in sifted all-purpose flour, baking powder, and salt. Spread the batter evenly in the prepared pan.
  4. Bake for 10–12 minutes, then immediately roll the hot cake in parchment to prevent cracks; let cool.
  5. Make the filling by beating cream cheese, softened butter, powdered sugar, and vanilla extract until fluffy.
  6. Carefully unroll the cooled cake, spread the filling evenly, then re-roll tightly.
  7. Frost with the remaining cream cheese mixture, shower with rainbow sprinkles, and chill before slicing.
