Description

Ingredients

  • 2 large eggs
  • 1 ¼ cups milk
  • 1 cup fresh raspberries
  • 2 tbsp melted butter
  • 1 tbsp sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream
  • 3 tbsp powdered sugar
  • Extra powdered sugar for dusting
  • Fresh mint (optional garnish)

Instructions

  1. Whisk flour, eggs, milk, melted butter, sugar, and vanilla until smooth and thin. Rest for 10 minutes.
  2. Heat a lightly buttered nonstick pan over medium; pour ¼ cup batter and swirl thin.
  3. Cook for 1–2 minutes per side until lightly golden; repeat with remaining batter. Cool slightly.
  4. Whip heavy cream with powdered sugar and vanilla until soft peaks form.
  5. Spread whipped vanilla cream across each crepe and place fresh raspberries along one edge.
  6. Roll tightly into logs and place seam-side down.
  7. Dust generously with powdered sugar and garnish with extra raspberries and mint.
