- 2 large eggs
- 1 ¼ cups milk
- 1 cup fresh raspberries
- 2 tbsp melted butter
- 1 tbsp sugar
- 1 tsp vanilla extract
- 1 cup heavy whipping cream
- 3 tbsp powdered sugar
- Extra powdered sugar for dusting
- Fresh mint (optional garnish)
Instructions
- Whisk flour, eggs, milk, melted butter, sugar, and vanilla until smooth and thin. Rest for 10 minutes.
- Heat a lightly buttered nonstick pan over medium; pour ¼ cup batter and swirl thin.
- Cook for 1–2 minutes per side until lightly golden; repeat with remaining batter. Cool slightly.
- Whip heavy cream with powdered sugar and vanilla until soft peaks form.
- Spread whipped vanilla cream across each crepe and place fresh raspberries along one edge.
- Roll tightly into logs and place seam-side down.
- Dust generously with powdered sugar and garnish with extra raspberries and mint.
