Ingredients

  • All-purpose flour
  • Active dry yeast
  • Baking soda
  • Warm water
  • Sugar
  • Salt

  • Coarse salt

Instructions

  1. Bloom yeast with warm water and sugar until foamy.
  2. Mix in flour and salt; knead until smooth and elastic.
  3. Let dough rise covered until doubled, about 1 hour.
  4. Divide dough into 8 pieces; roll each into a rope and flatten slightly.
  5. Place mozzarella in the center, seal dough tightly, and shape into pretzels.
  6. Boil each pretzel 20–30 seconds in baking soda water; remove and drain.
  7. Top with rosemary, Parmesan, and coarse salt.
  8. Bake until deep golden brown and cheese is bubbling inside; brush with butter if desired.
