Ingredients

  • 1 cup pistachio paste
  • 1 cup heavy cream
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • 2 large eggs
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup buttermilk
  • 1 cup dark chocolate (for ganache)
  • ½ cup chopped pistachios (for topping)

Instructions

  1. Preheat oven to 350°F and line two 8-inch cake pans.
  2. Whisk flour, cocoa powder, baking powder, baking soda, and salt in a bowl.
  3. In another bowl, beat sugars, eggs, oil, and vanilla until smooth. Mix in buttermilk.
  4. Gradually combine dry ingredients into wet until just incorporated. Divide into pans and bake for 28–32 minutes. Cool completely.
  5. Whip heavy cream until soft peaks form, then fold into pistachio paste to create a smooth pistachio cream layer.
  6. Heat cream and pour over chopped dark chocolate to make ganache; stir until glossy.
  7. Layer cake with pistachio cream between layers, frost the top with ganache, and finish with chopped pistachios. Chill slightly before slicing.
