- 3 large eggs (for egg toast)
- 1 large avocado (for avocado toast)
- 2 cups sliced mushrooms (for mushroom toast)
- Cherry tomatoes (halved)
- Crumbled feta
- Butter or olive oil
- Salt & pepper
- Parsley (for garnish)
- Lemon juice (for avocado mash)
Instructions
- Toast all bread slices in a skillet with a little butter or oil until golden.
- For Egg Toast: Scramble eggs softly with butter. Top toast with scrambled eggs and sliced boiled egg. Season with salt, pepper, and parsley.
- For Avocado Tomato Toast: Mash avocado with salt, pepper, and lemon juice. Spread on toast. Top with cherry tomatoes and feta.
- For Mushroom Feta Toast: Sauté mushrooms in butter until browned; season with salt and pepper. Spoon over toast and add feta.
- Garnish all toasts with fresh parsley.
- Serve as a trio for a brunch platter or enjoy individually.
