Ingredients
- Cooked long-grain rice (day-old preferred)
- Beef steak (thinly sliced)
- Yellow onion (sliced)
- Eggs
- Green onions
- Garlic
- Soy sauce or gluten-free tamari
- Oyster sauce (optional)
- Sesame oil
- Neutral cooking oil
- Carrots or mixed vegetables
- Salt & black pepper
Instructions
- Heat oil in a hot wok or skillet and sear beef quickly until browned; remove.
- Add more oil and sauté onions until soft and lightly caramelized.
- Stir in garlic and vegetables; cook until tender.
- Push everything aside and scramble eggs in the pan.
- Add rice, breaking it up and frying until hot and slightly crisp.
- Return beef to the pan; season with soy sauce and sesame oil.
- Toss with green onions, adjust seasoning, and serve hot.

- Day-old rice works best for texture.
