Ingredients
- Boneless skinless chicken thighs
- Olive oil
- Lemon juice

- Salt & black pepper
Instructions
- Mix olive oil, lemon juice, garlic, and all spices into a thick marinade.
- Toss chicken thighs thoroughly in the spice mixture.
- Layer sliced onions in the slow cooker; place chicken on top.
- Cover and cook until chicken is very tender and shreddable.
- Shred chicken directly in the cooker, mixing with juices.
- (Optional) Broil briefly to caramelize edges.
- Serve over flatbread, rice, or salad with pan juices spooned on top.
