Description

A delicious and hearty Slow Cooker French Onion Pot Roast featuring ultra-tender beef smothered in caramelized onions and rich, savory gravy.


Ingredients

  • 34 lbs Beef chuck roast
  • 1 can Condensed French onion soup
  • 1 packet Beefy onion soup mix
  • 2 Yellow onions, sliced
  • 4 cloves Garlic, minced
  • 2 tbsp Unsalted butter
  • 2 tbsp Vegetable oil
  • 1 tsp Dried thyme
  • 1 tsp Dried rosemary
  • 1 tsp Kosher salt
  • 1/2 tsp Black pepper
  • 2 tbsp Cornstarch
  • 1/4 cup Water
  • Fresh parsley (for garnish)

Instructions

  1. Season the chuck roast with salt and pepper; sear in vegetable oil until deeply browned.
  2. Slice the onions and add them to the slow cooker along with minced garlic and butter.
  3. Place the seared roast on top of the onions in the slow cooker.
  4. Pour in the French onion soup and sprinkle the beefy onion soup mix, thyme, and rosemary over the roast.
  5. Cover and cook on low for 8 hours until the beef is fall-apart tender.
  6. If desired, thicken the juices with a cornstarch slurry made from cornstarch and water.
  7. Serve the pot roast over mashed potatoes, spooning the onions and gravy on top, and garnish with fresh parsley.
