A delicious and hearty Slow Cooker French Onion Pot Roast featuring ultra-tender beef smothered in caramelized onions and rich, savory gravy.

- 3–4 lbs Beef chuck roast
- 1 can Condensed French onion soup
- 1 packet Beefy onion soup mix
- 2 Yellow onions, sliced
- 4 cloves Garlic, minced
- 2 tbsp Unsalted butter
- 2 tbsp Vegetable oil
- 1 tsp Dried thyme
- 1 tsp Dried rosemary
- 1 tsp Kosher salt
- 1/2 tsp Black pepper
- 2 tbsp Cornstarch
- 1/4 cup Water
- Fresh parsley (for garnish)
Instructions
- Season the chuck roast with salt and pepper; sear in vegetable oil until deeply browned.
- Slice the onions and add them to the slow cooker along with minced garlic and butter.
- Place the seared roast on top of the onions in the slow cooker.
- Pour in the French onion soup and sprinkle the beefy onion soup mix, thyme, and rosemary over the roast.
- Cover and cook on low for 8 hours until the beef is fall-apart tender.
- If desired, thicken the juices with a cornstarch slurry made from cornstarch and water.
- Serve the pot roast over mashed potatoes, spooning the onions and gravy on top, and garnish with fresh parsley.
Notes
- For best results, sear the roast well to enhance flavor.
- Adjust seasoning to taste before serving.
- Leftovers can be stored in the refrigerator for up to 3 days.
