Ingredients

  • Spaghetti
  • Cooked chicken (shredded)
  • Rotel tomatoes (with green chiles)
  • Velveeta or cheddar cheese
  • Cream of mushroom or chicken soup
  • Onion (finely diced)
  • Garlic powder
  • Butter
  • Milk or chicken broth
  • Salt & black pepper
  • Paprika or cayenne (optional)
  • Fresh parsley (optional garnish)

Instructions

  1. Cook spaghetti in salted water until just al dente; drain.
  2. In a large skillet, melt butter and sauté onion until soft.
  3. Stir in soup, Rotel, milk, and seasonings; heat until smooth.
  4. Add cheese and stir until fully melted and creamy.
  5. Fold in shredded chicken and cooked spaghetti.
  6. Transfer to a baking dish and smooth the top.
  7. Bake until bubbly and lightly golden; rest briefly before serving.
