Ingredients

  • Chicken thighs (bone-in or boneless)
  • Smoked paprika (Spanish pimentón)
  • Crushed tomatoes
  • Onion
  • Red bell pepper
  • Green bell pepper
  • Garlic
  • Olive oil
  • Chicken stock
  • Fresh rosemary
  • Salt & black pepper
  • Chili flakes (optional)
  • Fresh parsley (for garnish)

Instructions

  1. Season chicken generously with smoked paprika, salt, and pepper.
  2. Sear chicken in olive oil until deeply golden; remove and set aside.
  3. In the same pan, sauté onion, garlic, and peppers until softened.
  4. Stir in smoked paprika and crushed tomatoes; cook until fragrant.
  5. Add chicken stock and rosemary, then return chicken to the pan.
  6. Cover and simmer gently until chicken is tender and sauce thickens.
  7. Finish with parsley and adjust seasoning before serving.

Notes

  • Chili flakes can be added for extra heat.
