Ingredients
- Chicken thighs (bone-in or boneless)
- Smoked paprika (Spanish pimentón)
- Crushed tomatoes
- Onion
- Red bell pepper
- Green bell pepper
- Garlic
- Olive oil
- Chicken stock
- Fresh rosemary
- Salt & black pepper
- Chili flakes (optional)
- Fresh parsley (for garnish)
Instructions
- Season chicken generously with smoked paprika, salt, and pepper.
- Sear chicken in olive oil until deeply golden; remove and set aside.
- In the same pan, sauté onion, garlic, and peppers until softened.
- Stir in smoked paprika and crushed tomatoes; cook until fragrant.
- Add chicken stock and rosemary, then return chicken to the pan.
- Cover and simmer gently until chicken is tender and sauce thickens.
- Finish with parsley and adjust seasoning before serving.
Notes
- Chili flakes can be added for extra heat.
- Serve with crusty bread or over rice for a complete meal.
