Ingredients

  • 1 cup Corn

Instructions

  1. Heat olive oil in a pot over medium heat; sauté onion until soft and translucent.
  2. Add garlic, jalapeños, and cumin; cook briefly until fragrant.
  3. Pour in chicken broth and bring to a gentle simmer.
  4. Add chicken breasts and cook until tender and fully cooked.
  5. Remove chicken, shred, and return it to the pot.
  6. Stir in corn, lime juice, salt, and pepper; simmer 5–10 minutes.
  7. Finish with chopped cilantro and serve topped with avocado slices.
