- Brewed espresso (strong)
- Unsalted butter
- All-purpose flour
- Granulated sugar
- Brown sugar
- 1 Egg
- Vanilla extract

Instructions
- Preheat oven to 350°F and line a baking sheet with parchment paper.
- Cream butter, granulated sugar, and brown sugar until light and fluffy. Beat in egg, vanilla, and 2 tablespoons cooled espresso.
- Whisk flour, baking powder, and salt separately, then fold into wet ingredients until just combined.
- Scoop dough onto baking sheet and gently flatten. Bake 10–12 minutes until edges are lightly golden. Cool completely.
- Beat mascarpone with a tablespoon of espresso and a little sugar until smooth and creamy.
- Spread thick mascarpone frosting over each cooled cookie.
- Dust generously with cocoa powder before serving.

- For a stronger coffee flavor, increase the amount of espresso in the frosting.
