Ingredients

  • Mascarpone cheese
  • Brewed espresso (strong)
  • Unsalted butter
  • All-purpose flour
  • Granulated sugar
  • Brown sugar
  • 1 Egg
  • Vanilla extract
  • Baking powder
  • Salt
  • Cocoa powder (for dusting)

Instructions

  1. Preheat oven to 350°F and line a baking sheet with parchment paper.
  2. Cream butter, granulated sugar, and brown sugar until light and fluffy. Beat in egg, vanilla, and 2 tablespoons cooled espresso.
  3. Whisk flour, baking powder, and salt separately, then fold into wet ingredients until just combined.
  4. Scoop dough onto baking sheet and gently flatten. Bake 10–12 minutes until edges are lightly golden. Cool completely.
  5. Beat mascarpone with a tablespoon of espresso and a little sugar until smooth and creamy.
  6. Spread thick mascarpone frosting over each cooled cookie.
  7. Dust generously with cocoa powder before serving.
