Ingredients

  • 4 Bell peppers (red, green, yellow)
  • 1 lb Ground beef
  • 1 cup Shredded cheese (cheddar or mozzarella)
  • 1 cup Cooked rice
  • 2 tbsp Olive oil
  • 1 Onion, diced
  • 2 cloves Garlic, minced
  • 1 can Canned diced tomatoes
  • 1 cup Corn kernels
  • 1 tsp Italian seasoning
  • Salt & black pepper to taste
  • Fresh parsley (optional)

Instructions

  1. Slice bell peppers in half lengthwise and remove seeds; place cut-side up in a baking dish.
  2. Heat olive oil in a skillet and sauté onion until soft, then add garlic.
  3. Brown ground beef, seasoning with salt, pepper, and Italian seasoning.
  4. Stir in cooked rice, diced tomatoes, and corn; mix well.
  5. Spoon filling evenly into each pepper half.
  6. Top generously with shredded cheese.
  7. Bake uncovered for 30–35 minutes until peppers are tender and cheese is melted and golden.
