- 4 Bell peppers (red, green, yellow)
- 1 lb Ground beef
- 1 cup Shredded cheese (cheddar or mozzarella)
- 1 cup Cooked rice
- 2 tbsp Olive oil
- 1 Onion, diced
- 2 cloves Garlic, minced
- 1 can Canned diced tomatoes
- 1 cup Corn kernels
- 1 tsp Italian seasoning
- Salt & black pepper to taste
- Fresh parsley (optional)
Instructions
- Slice bell peppers in half lengthwise and remove seeds; place cut-side up in a baking dish.
- Heat olive oil in a skillet and sauté onion until soft, then add garlic.
- Brown ground beef, seasoning with salt, pepper, and Italian seasoning.
- Stir in cooked rice, diced tomatoes, and corn; mix well.
- Spoon filling evenly into each pepper half.
- Top generously with shredded cheese.
- Bake uncovered for 30–35 minutes until peppers are tender and cheese is melted and golden.

- For a vegetarian option, substitute ground beef with black beans or lentils.
